Full grain leather glued to flat wood blocks. The blocks are Alder wood veneer on MDF so they are very flat and dimensionally stable. Any stains you see do not affect performance. Apply the compound of your choice. I’ve found that black buffing compound (emory) works well to polish a knife edge after initial sharpening on a stone. You can also use finer compounds (red or white rouge, green) but they will not cut as fast as black.
